We were born in a small region

in the Green Heart of Italy

A territory made up of beautiful hills and small valleys between the two mountain massifs of the Abruzzo, Lazio and Molise National Park and the Matese Park.

Molise is still today an area dominated by greenery and centuries-old traces of man dedicated to sheep farming and breeding. Archaeological evidence tells of an ancient history.

Due to its geographical position, Molise has always been crossed by sheep tracks, huge green highways that allowed the passage of herds from the mountains of the central Apennines to the Apulian plains in winter and the reverse route in summer.

Transhumance

Around Transhumance, a practice recognized as a UNESCO World Heritage Site in 2019, the traditions, festivals and even urban planning of Molise have developed over the centuries.

In their passage, were milked and, along these green giants, the first milking stations were formed which, over time, began to process cow’s milk with hot water, taking advantage of a wonderful property of cow’s casein, the ability to spin. This rudimentary heat treatment was increasingly favoured, with the birth of transhumant shepherd-cheesemakers first and then stationary, with the birth of the first production settlements.

The art of cheese-making was often handed down from father to son and even today Molise has numerous dairies, located throughout the region.
